Personally the only good 'brewing' use for spuds is probably poitín, that's real spuds though not your american substitute for the real thing.
Is it likely that a beer made with sweet potatoes would be something anyone would want to drink is probably questionable ... sounds more likely to be a hit with the hipster squad.
