The stock (and even the Ducati Performance) mapping is still lean at low speeds even after the O2 sensors are removed, which contributes to the "snatchiness". That's where a remap, like the Rexxer ones offered by Cornerspeed, will help as they enrich the mixture where you need it, at town speeds.
