Fitted some new tyres on my evo today. I find getting the old tyres (especially the rear) off the rims can be a bitch of a job with tyre levers, so instead I simply slice through the sidewalls with a Stanley knife to remove the beads and in two minutes the tyre's off.

Just thought I'd share - hopefully this might save someone a lot of sweat, colourful language or a scratched rim.

On my 750, I find that, once the bead has been "broken" off the rim, 3 or 4 cable ties around the tyre to hold the beads together for about half of its circumference allows the beads to drop fully into the "well" of the rim, which subsequently allows the tyre to be slipped off with little more than your fingers.
At most I use two, very short, feeble, plastic tyre levers intended for bicycles.

The same method gets the new tyre back on again too.

At least, this has worked countless times for me on the rear wheel.
Haven't tried a front yet.

ok method unless you have steel beading which makes it much more difficult without damaging wheel.
