Hi,
This is going to sound like a silly question but:

How the heck do I get the from calipers off the bike? I've tried taking them off with the wheel in but I can't pull them past the wheel rim, so the pads are still over the disc. And I can't take the front wheel off with the calpers in position.

It all seems very odd and I'm sure there is a simple answer but I can't work it out...

You can but it isn't as easy as it could be.
I usually just give the caliper a twist against the rotor towards you, it just pushes the pistons back in a little. Any displaced fluid should just flow bck up to the reservoir, worst case loosen the bleed nipple a little while you twist.
You can then angle the caliper(s) just enough to get them off.
