Just wondering if someone has a 190 tyre fitted to a M900 rim, if so what is the width of the tyre! Or how much of a gap do you have between the tyre and chain.

You've answered the question in the title Yorkie, 190mm. The thing is this will affect the handling potentially with aspect ratio factors to be considered as well.
A tyre may well fit, but which one? The crown of different manufacturers seems to vary affecting the actual width even though it should be fixed, that's rubber!

I was happy with the supposed width, but with increased side wall height and different make things can differ quite a bit.

I'm running Metzeler RaceTec K1s or K2s currently on a 180 rear, I've hopefully got a 190 part worn Metzeler coming in a week so that should sort out the info for me.

I wouldn't put anymore than 10mm wider than what is standard, as it will mess up the handling. If the rim isn't wide enough for the designed tyre, it will pull it in at the sides and make it narrower than designed and then also taller and more sharper on the centre tread. It will drop into corners fast and wear out quickly as well.

On the older Ducati SBK's (916 through 999) Ducati fitted 190 rear tyres to the 5.5" wheels for 'fashion' reasons, almost everyone subsequently changed them to a 180 as the bike will turn in and handle better, the 190 doesn't fit properly on a 5.5" rim as it squashes the tyre in too much (needs a 6") and the bikes don't have enough power to overwhelm a 180 contact patch anyway.

The 1098/1198 have a 6" wheel and use a 190 but a 190/55 rather than a 190/50 because the 50 profile is too slow turning, 848s have a 180 on a 5.5".

That said if you like the look of the 190 that's fine but it won't be an improvement in ride quality.
