I have some handlebars off a 1000sie, if they fit you are welcome to them. They are in london, though.

I'm guessing you have 40mm calipers on your 600, if so physically: yes.
I don't know if Brembo did different piston sizes, sorry.

looks unbalanced , sarahs not worried about unsprung weight etc, so its purly a cosmetic mod
