Fork pitch = distance between the fork tubes which is determined by the spacers so pretty much fixed or the shock legs would be operating at an angle and wearing the bushes and seals more rapidly.
Not a something I've ever seen quoted anywhere

A fork (or knife) in the yolk is messy and should be avoided IMHO. But thats just the way I like to eat my eggs :)

I think you're after the position of the shock bodies in the yokes, The up and down-ness, or how much sticks out at the top. Mines got about 5mm which is sharp enough turning for me.

Might help if the 'other ducati' was clarified a little?
They're all going to be similar between the types of monster where the forks fitted are the same type I'd think.
Mines got a total 45.16mm from the inner face of the suspension to the outer edge of the bearing seat. there's actually a .8 difference between these. Total is about 86.3

Rule of thumb on fork pitch is that sports bikes are smaller, tourers wider. Wider usually means more stable
Fnar Fnar see a HD's typical reaction to a corner which is to ignore it and go straight on unless at walking pace. I just love meeting those big runs on twisties... mincemeat ;)

Well I would measure the total distance across the forks and then subtract the diameter of the fork leg thus giving you the centres. I would measure it for you but I have no vernier calipers and wouldn't be as accurate as you may need.

Note to self get some calipers off of EBAY soon.

Well measured with a steel tape its 255mm across forks and fork diameter is 50mm . So that makes inside centres 205mm.

Hope it helps and the same on the 748 btw showa
