Does anyone know if there is a Haynes manual for an S4 or which of the ones they do will cover engine components?
Or does anyone do a manual for an S4?

you can get a genuine factory repair manual from your local Ducati dealer, you'll have to order it though, around £20.00.

I thought the manuals are multi-language - the one for my 900 certainly is.

And if you hunt around the ducati.com site you can find the technical details giving torque settings and other service details etc.
avoid haynes manuals if you can
genuine factory manuals tend to be a lot better
